Conveniently located behind the Bridger Cookhouse is our custom designed greenhouse providing the very freshest ingredients directly to our Bridger Cookhouse and Branch Restaurant. Herbs, vegetables and flowers for the Explorer Cabins at Yellowstone are all grown right on-site!

Executive Chef Jacob Tew first proposed the idea of a greenhouse in May 2013 to the Director of Environmental Affairs, Justin Cook, when asked how he would like to see our restaurant become more environmental. Justin added the greenhouse to the then-planned construction of our new Explorer Cabins and Bridger Cookhouse. Construction of the greenhouse began and was ready for use by mid-June 2013. It took some time for things to grow, but we began using the herbs and vegetables in both The Branch Restaurant and the Bridger Cookhouse in July 2013. In the greenhouse we grow our own Rosemary, Thyme, Parsley, Basil, Lime Basil, Mint, Lettuce, Tomatoes and Peppers. These herbs and vegetables are used to add extra flavor for all our sauces, seasonings, garnishes and rubs. The greenhouse is maintained on a daily basis by Executive Chef Jacob Tew and our kitchen crew. It is available for public viewing during daylight hours.
